Ingredients
- 2 eggs
- 1/2 cup plant-based milk
- 1/3 cup sugar
- 6 tbsp rice oil
- 2 cups gluten-free rice flour
- 2 1/2 tsp gluten-free baking powder
- 1 vanilla bean
- 3/4 cup blueberries

Steps
In a bowl, lightly whisk the eggs and sugar. Add the plant-based milk and rice oil.
Scrape the seeds from the vanilla bean into the mixture.
Fold in the sifted rice flour and baking powder.
Gently fold in the blueberries with a spatula.
Pour into mini loaf pans filling each about three quarters full.
Bake at 356°F for about 25–30 minutes in a preheated conventional oven.Remove from the oven and let cool before dusting with powdered sugar.
