Ingredients

  • 2 eggs
  • 1/2 cup plant-based milk
  • 1/3 cup sugar
  • 6 tbsp rice oil
  • 2 cups gluten-free rice flour
  • 2 1/2 tsp gluten-free baking powder
  • 1 vanilla bean
  • 3/4 cup blueberries

Steps

  • In a bowl, lightly whisk the eggs and sugar. Add the plant-based milk and rice oil.
    Scrape the seeds from the vanilla bean into the mixture.
    Fold in the sifted rice flour and baking powder.
    Gently fold in the blueberries with a spatula.
    Pour into mini loaf pans filling each about three quarters full.
    Bake at 356°F for about 25–30 minutes in a preheated conventional oven.

    Remove from the oven and let cool before dusting with powdered sugar.
