Puff Pastry with Potatoes and Mozzarella

How many times have you come home late and had no idea what to cook? The puff pastry with potatoes and mozzarella is, in my opinion, perfect for those quick lunches or dinners when you don’t have much time but crave something tasty. It requires few ingredients, usually items we almost always have in the fridge: a rectangular roll of puff pastry, potatoes and mozzarella. In this recipe I used precooked vacuum-packed potatoes I found in the supermarket refrigerated section, but you can use regular boiled potatoes. Ingredients to make the puff pastry with potatoes and mozzarella

  • 1 roll puff pastry (Rectangular)
  • 3.5 oz low-moisture mozzarella (for pizza)
  • 9 oz potatoes (precooked)
  • to taste salt
  • to taste black pepper
  • to taste dried oregano

Steps to make the puff pastry with potatoes and mozzarella

  • To prepare the puff pastry with potatoes and mozzarella, first unroll a rectangular roll of puff pastry, fold the pastry like a book, fold the edges over well so they don’t open during baking and create a sort of rim, then prick the base with a fork. Take the potatoes — I used precooked vacuum-packed potatoes from the supermarket, but if you prefer you can use regular potatoes: boil them for about 25 minutes and then cut them into pieces.

  • Place the low-moisture mozzarella for pizza on the base of the pastry, then add the potato pieces on top. Season with salt and pepper to taste, sprinkle with dried oregano and drizzle with extra virgin olive oil. While you prepare the pastry, preheat a convection oven to 392°F. Bake the pastry in a 392°F convection oven for about 20 minutes, until golden.

  • Remove from the oven, let it cool slightly and then cut into large pieces if you want to serve it as a main dish, or into smaller pieces if you want it as an appetizer.

Storage and tips

You can store the puff pastry in an airtight container for up to 2 days.

However, wait until it is completely cool before storing. If you close it in a container while it’s still warm, the moisture will make the puff pastry soggy.

If possible, avoid using the microwave to reheat it. Reheat in the oven for about 5 minutes or in an air fryer.
