The eggplant sticks with breadcrumbs in the air fryer are a simple, easy, quick and tasty side dish. They cook in the air fryer in a short time. For this recipe I used breadcrumbs, grated Grana Padano and dried oregano. The sticks will become nicely crispy, but pay attention to cooking time — don’t cook them too long or they will get burnt.   • 1 eggplant (large)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons breadcrumbs
  • 1 tablespoon grated Grana Padano

Steps to make eggplant sticks with breadcrumbs in the air fryer

  • To prepare the eggplant sticks with breadcrumbs in the air fryer, first wash the eggplant well, cut it into slices not too thick and then cut into sticks. Put the sticks in a large bowl, add 2 tablespoons of extra virgin olive oil and mix well. Then add 2 tablespoons of breadcrumbs, 1 tablespoon of grated Grana Padano, salt, black pepper and a little dried oregano. Mix well with a spoon.

  • Turn on the air fryer, place the sticks in the basket so they don’t overlap, and cook them at 392°F for about 11 minutes. Halfway through cooking, give the basket a shake so the cooking is even. Then check doneness depending on your air fryer and desired crispness. If you see they are still soft, cook them another minute or two.

Storage and tips

You can store them in the refrigerator in an airtight container for up to 2 days.

If you want to reheat them, don’t use the microwave or they will become soggy; I suggest reheating them in the air fryer for a couple of minutes so they become nice and crispy again.
