DEVONSHIRE SPLITS – SWEET ROLLS WITH CREAM AND STRAWBERRIES

The Devonshire Splits are soft sweet rolls from England typically served at tea time. Their origin is tied to the tradition of southwestern England, particularly the county of Devon, from which they take their name. These are small milk rolls, light and fragrant, that are sliced in half and filled with whipped cream (or the typical clotted cream) and strawberry jam, but also raspberries or other berries. Pillowy soft, similar to brioche, they are simply irresistible! For a perfect result, it is recommended to prepare the rolls in advance and store them under a glass dome or in an airtight container, stuffing them only at serving time. Ingredients

  • 3/4 cup 00 flour
  • 0.7 oz fresh yeast (about 20 g)
  • 1/3 cup milk (warm (about 3.4 fl oz))
  • 1 teaspoon sugar
  • 3 cup 00 flour
  • 2/3 cup milk (about 5 fl oz)
  • 5 tbsp granulated sugar
  • 1/4 cup butter (melted (about 2 oz))
  • 1 teaspoon salt
  • 1 2/3 cup whipping cream (already sweetened)
  • 7 oz strawberry jam (about 200 g)
  • as needed powdered sugar (for decorating)

Preparation

  • Prepare the sponge (lievitino) by combining the sifted flour, the sugar and the yeast dissolved in the warm milk in a bowl. Mix until you get a homogeneous, soft and slightly sticky mixture.

  • Cover with plastic wrap and let rest for about 30-40 minutes, until bubbles form on the surface.

  • Pour the sifted flour into a large bowl and make a well. Add the sponge to the center, the warm milk, the sugar, the melted butter and the salt.

  • Knead vigorously for about 10 minutes, gradually incorporating all the flour, until you obtain a smooth, soft and homogeneous dough.

  • Transfer the dough to a lightly oiled container, cover and let rise in a warm place for about 1-2 hours, or until doubled in volume.

  • Divide the dough into portions of about 2.5 oz (70 g). Shape smooth balls by working them between your hands or on the work surface. Place them on a baking sheet lined with parchment paper, well spaced from each other.

  • Cover and let rise for at least 30-40 minutes. Brush the surface with a little oil or with an egg yolk mixed with milk.

  • Bake in a preheated oven at 428°F for 12-15 minutes, until golden. Remove from the oven and let cool completely.

  • Slice the rolls horizontally. Spread the base with strawberry jam. Add a generous layer of whipped cream using a piping bag. Optionally add fresh strawberries cut into pieces.

  • Close the rolls and dust with powdered sugar. The Devonshire splits are ready to be served on a serving platter.
