SOFT YOGURT AND STRAWBERRY SNAILS

The soft yogurt and strawberry snails are tender, fragrant and perfect to start the day with something homemade — light yet indulgent. They are made with Greek yogurt to obtain a soft dough without butter, for a delicate flavor and an irresistible texture. You can replace the strawberry jam with hazelnut spread, apricot jam or pastry cream to create different and equally delicious variations. The yogurt and strawberry snails keep for up to 2-3 days at room temperature, well covered under a cake dome. Below, let’s see what you need to prepare them at home:

Ingredients

  • 3 1/3 cups all-purpose flour (00)
  • 0.4 oz fresh baker's yeast
  • 1/2 cup sugar
  • 1/2 cup Greek yogurt
  • 1 egg (+ 1 yolk for brushing)
  • 3.4 fl oz warm milk (+ 1 tbsp for brushing)
  • vanilla extract
  • 3 1/2 tbsp vegetable oil (neutral-flavored)
  • zest of 1/2 lemon
  • to taste strawberry jam

Preparation

  • Dissolve the fresh baker’s yeast in the warm milk. Pour the flour into a large bowl, add the sugar, lemon zest, vanilla extract and mix.

  • Add the Greek yogurt, the egg and the milk with the yeast and begin to knead. Add the vegetable oil little by little, continuing to work the dough until you obtain a smooth and elastic consistency.

  • Cover the dough and let it rise in a warm place until doubled in volume (about 2-3 hours).

  • Take the dough, roll it out with a rolling pin forming a rectangle. Spread the strawberry jam evenly over the entire surface.

  • Roll the dough up from the long side to form a compact log. Cut into slices to obtain the classic snail shapes.

  • Place the formed buns on a baking tray lined with parchment paper, spaced well apart. Let rise again for about an hour in a warm place.

  • Gently brush the surface with a beaten yolk mixed with a tablespoon of milk. Bake in a preheated conventional oven (no fan) at 356°F for about 20 minutes, until golden brown.

  • Remove from the oven, let cool and serve the soft yogurt and strawberry snails on a serving platter.
