Ingredients
- 14 oz dry cocoa cookies ((about 4 cups))
- 5 tbsp instant chocolate drink powder (e.g., Nesquik (about 40 g))
- 1/3 cup milk (also plant-based, such as coconut milk)
- 1 tbsp liqueur (optional)
- 1 1/8 cup ricotta
- 6 tbsp powdered sugar
- 3 1/2 tbsp pistachio cream (+ more to decorate)
- 2 tbsp chopped pistachios (+ more to decorate)
Preparation
To prepare the cream, start by sieving the ricotta into a bowl to obtain a smooth, lump-free texture. Work it with a fork until creamy, then add the powdered sugar and mix thoroughly.
Add the pistachio cream and continue to blend until you obtain a homogeneous, velvety mixture. If desired, add the liqueur and stir. Cover with plastic wrap and keep refrigerated until ready to use.
Meanwhile, prepare the base. Reduce the cookies to fine crumbs using a food processor, then transfer them to a bowl and add the instant chocolate powder.
Pour in the milk little by little, mixing until you get a soft but compact mixture. If you like, add the liqueur as well. Work everything until you form a smooth, cohesive dough.
Place the dough between two sheets of plastic wrap and roll it with a rolling pin until you obtain a rectangle about 3/16–1/4 in thick (about 5–6 mm). Trim the edges and evenly spread the pistachio cream over the surface, leaving a small margin free.
Sprinkle with the chopped pistachios and, using the plastic wrap to help you, gently roll the dough onto itself, keeping it tight. Wrap the roll in plastic wrap and place it with the seam facing down.
Transfer to the fridge and let firm up for at least an hour. When ready to serve, decorate as desired with more pistachio cream and chopped pistachios. Slice the no-bake pistachio roll and enjoy it well chilled.
