Ingredients
- 3 1/2 cups mixed cereals (such as puffed rice or cornflakes)
- 5 1/4 oz dark chocolate
- 1/4 cup heavy cream
- 1 tbsp honey
- 1 1/2 tbsp butter
Preparation
To prepare the soft chocolates with cereals, start by finely chopping the dark chocolate. Place it in a heatproof bowl and melt it in a bain-marie together with the butter, stirring gently.
Meanwhile, lightly warm the cream (do not bring it to a boil) and add it to the chocolate mixture little by little. Stir with a spatula until you obtain a velvety, well-emulsified ganache.
At this point, add the honey and let the mixture cool to room temperature; then cover it with plastic wrap directly on the surface and refrigerate for about 2 hours.
Once chilled, take the ganache and whip it with electric beaters — it will change color, becoming lighter, and will take on a soft, fluffy texture.
Fold in the cereals, mixing gently to distribute them evenly without crushing them too much. Then portion the mixture into paper liners using two teaspoons, or shape it with your hands into little balls.
Finally, transfer the chocolates to the fridge and let them firm up for at least 1 hour, until they are compact and ready to enjoy.
