The real hook of this recipe is the filling, rich and fragrant, made with pork sausage meat.
This choice is not random at all: unlike the more common versions, the pork releases its natural juices during cooking, which moisten the inside of the pastry keeping it tender, while the outside becomes brown, glossy and incredibly flaky.

Ingredients

  • 2 rolls Puff pastry (rectangular)
  • 1 lb 2 oz sausage meat (pork luganega sausage or hot dogs)
  • 1 egg yolk
  • 1 tbsp water

Preparation of the Puff Pastry Rustici

  • The recipe is really simple and quick to prepare!
    Just place the sausage meat or luganega (as I did) on the narrower side of the unrolled puff pastry, creating a long sausage-shaped strip along the entire length….

  • ….then roll the pastry over itself, using the necessary pastry for sealing, then cut to obtain a little sausage roll.
    Cut the length into 6 pieces and place them on a baking sheet lined with parchment paper.
    Repeat the operation until you have used all the pastry and filling.
    Brush the rustici by mixing an egg yolk with a splash of water or milk in a glass.

  • Bake in a hot oven at 392°F for 12-15 minutes, checking for doneness.
