How do you cook this side dish?
You can prepare them a bit in advance, as they need to be boiled a little before cooking in the tomato sauce, so half the work can be done ahead of time, saving you time.
Generally, when it’s the season for this vegetable, I clean them, boil them until they’re still a bit firm, and then I put them in plastic bags and freeze them, so when I need them, they’ll already be half done.

Ingredients for Making Snow Peas in Tomato Sauce
- 1.5 lbs snow peas
- 1 can of peeled tomatoes (small)
- 2 tbsps extra virgin olive oil
- 1 tsp salt (to taste)
- 2 tsps oregano (dried)
- 1 clove garlic (crushed)
- to taste pepper
Preparation of Snow Peas in Tomato Sauce
Boil the snow peas for at least 10 minutes (starting the timer from when the water boils), then drain them and place them in a tall-sided pan.
The boiling should leave them still a bit firm.
In the pan, sauté the crushed garlic slightly with the oil, then add the tomatoes, salt, oregano, and pepper, mix everything well, and allow to cook for just 1-2 minutes.
Add the green beans and cook them for about 30 minutes covered, or until they are soft, adding a splash of water if needed.
Cooking times are indicative, as it greatly depends on the type of green bean or snow peas (however we want to call them).
When done cooking, plate and serve hot.
