Ingredients to make the Spelt Apple Cake

  • 2 eggs (medium)
  • 3/4 cup granulated sugar
  • 1 3/4 cups spelt flour
  • 7 tbsp butter
  • 1 packet baking powder (for cakes, 1 packet)
  • 1/2 cup whole milk
  • juice of 1 lemon
  • 2 tbsp granulated sugar
  • 3 tsp ground cinnamon
  • 1 tbsp + 1 tsp rum
  • 4 apples (about 1.75 lb (peeled and cored))
  • 1 tbsp powdered sugar

Preparation of the Spelt Apple Cake

  • Let’s prepare my spelt apple cake: start by peeling the apples and cutting them into cubes. Toss them with 2 tbsp of sugar, the cinnamon, the lemon juice, and the rum, then mix well and set aside.
    In a mixer, put the eggs and the sugar and beat at high speed for a few minutes until the mixture becomes almost a light cream.
    In the microwave, soften the butter and add it to the mixture, mixing again at medium speed. Add part of the flour while stirring, then the warm milk, the packet of baking powder and the remaining spelt flour, completing the batter and making sure it is well combined.
    Fold the apples into the batter with a spoon.

  • Take a cake pan, butter and flour it, pour in the batter and level it well. Bake in a preheated oven at 356°F (180°C) for about 45 minutes, checking for doneness.
