Ingredients to make the Apple Yogurt Cake
- 1.75 lb apples (weight without peel)
- 3/4 cup granulated sugar (about 160 g)
- 2/3 cup plain yogurt (about 150 g)
- 3 eggs (medium)
- 1/2 cup sunflower oil
- grated zest of 1/2 lemon
- juice of 1/2 lemon
- 1 packet baking powder
- 3 1/4 cups all-purpose flour (about 400 g)
- 1 teaspoon ground cinnamon
- 1 tablespoon granulated sugar
- juice of 1/2 lemon
- 1 tablespoon sugar (to sprinkle on the surface of the apples before baking)

Preparation of the Apple Yogurt Cake
First, peel the apples and cut them into cubes, setting aside 2 to slice for the final decoration.
Put them in two different bowls: toss the cubed apples with lemon, cinnamon and sugar, and mix; toss the sliced apples only with a splash of lemon to prevent them from browning.
Take the electric whisk, place the eggs and sugar in a bowl and beat at high speed for a few minutes until the mixture becomes slightly fluffy.
Then at low speed, gradually add the remaining ingredients, except the flour.
Once all the ingredients are incorporated, add the flour sifted and work the batter at low speed for a few minutes.
At this point, fold in the cubed apples with a spatula.
Prepare an 8 2/3-inch (22 cm) pan, buttered and floured, or use a silicone pan (in that case there is no need to butter and flour it). Pour the batter into the pan, level it and arrange the apple slices on the surface, then sprinkle with sugar.
Bake in a preheated oven at 356°F (180°C) for 40 minutes, checking doneness. Test with a skewer and if necessary continue baking for a few more minutes.
When baked, remove from the oven and let cool, then transfer to a serving plate and dust with powdered sugar.
