Ingredients

  • 3/4 cup + 1 tbsp (about 100 g / 3.5 oz) cup all-purpose flour (or 60 g (about 1/2 cup) all-purpose flour + 40 g (about 1/3 cup) instant oats)
  • 2 tbsp + 1 tsp tbsp granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1 packet vanillin (or vanilla extract)
  • fine salt
  • 6 tbsp yogurt (also soy or lactose-free (about 90 g / 3.2 oz))
  • 3.5 tbsp milk (also plant-based or lactose-free (about 50 ml / 1.7 fl oz))
  • 1 tbsp sunflower oil
  • 1 egg
  • 2/3 cup fresh blueberries (optional, or other fruit to add before cooking (about 90 g / 3.2 oz))

Steps

1 – Prepare the wet ingredients: In a large bowl, beat the egg with the milk, yogurt, oil and vanilla.
2 – Mix the dry ingredients: In another bowl combine the flour, sugar (20/30 g based on your taste), baking powder, baking soda and the pinch of salt.
3 – Combine the dry ingredients with the wet: Mix the batter with a whisk until you no longer see dry flour. The batter should be lumpy — don’t smooth it out too much!
4 – Rest (essential!): Let the batter rest for 10-15 minutes at room temperature. This will activate the baking soda and make the pancakes puffier. After resting, before cooking you can add fresh fruit cut into pieces if you want this variation (blueberries in my case) or other ingredients.
5 – Cooking: Heat a non-stick pan over medium-low heat and lightly oil it with a brush. Using a ladle, or an ice cream scoop (the scooping trick), pour one portion of batter at a time into the pan without touching it afterward, and most importantly never press down on the pancakes! When bubbles appear on the surface (about 2-3 min), flip and cook the other side until golden.

Extra tips
– Don’t turn the heat up too high: slow cooking is better than burnt pancakes outside and raw inside.
– If you want even taller pancakes, pour a thicker batter and cook them covered with a lid for 1-2 minutes.
– Pancakes can be frozen! Stack them with parchment paper between each and then reheat in a pan or toaster.
