Lentil and Potato Patties

These lentil and potato patties came about, as always happens to me, from having an ingredient at home and wanting to use it up. You might ask, Lentils? Potatoes? No! Parsley! Yes, I had this bunch of parsley ordered online by mistake (I usually get the plant) and I wanted to use it…

Parsley calls for potatoes and then we also need some proteins, right? Chickpeas or lentils? I decided on lentils, so let’s make some patties. And here I have prepared these tasty vegan patties as always in my beloved air fryer, the Philips XXL Airfryer.

I know I shouldn’t say this on my blog, but I think these patties would be even tastier fried, but we’ll settle for the oven, just pretend I didn’t even write this!!! In fact, let’s quietly move on to the recipe

For more vegan patties or an ideal side dish for them, here’s what I suggest:

Ingredients

  • 10 oz cooked lentils (cook about 3 oz from dry)
  • 1 lb potatoes (I don't peel them because the skin is healthy!)
  • 1 carrot
  • 1 onion
  • 2 cloves garlic
  • 1 tsp nutritional yeast
  • 1 tsp ground cumin
  • 1 tbsp soy sauce
  • 1 bunch parsley
  • 1 tbsp extra virgin olive oil (1 tbsp in the mixture and 1 tsp for cooking. Always use measuring spoons!)
  • to taste thyme (ground)
  • 1 tsp salt
  • Total points = 20 WW points
  • Points per patty = 1 WW point

Steps

As always, prepare and measure all the ingredients, please!

  • Start with the potatoes, which should be thoroughly washed with a brush, diced, and boiled in lightly salted cold water for 10-15 minutes until soft. Mash them and let them cool.

  • Place the chopped onion, carrot, and garlic, dried thyme, cumin, and parsley into the blender jar. Add the well-drained lentils, soy sauce, salt, oil, and pulse until blended. It’s better if there are small pieces as the patties will have a bit of texture, which in my opinion makes them tastier.

  • Place the mixture in a bowl, add the nutritional yeast, and the cooled mashed potatoes, and mix well with your hands. Taste and adjust the salt if necessary.

  • Form slightly flattened patties. I use an ice cream scoop, which is very handy for making patties more or less the same size. With this tool, I made 20. If you want, you can also make 40 smaller ones, to your taste! Brush the patties on both sides with a little oil. 1 teaspoon will be enough for all the patties.

  • For 20 patties, you need to cook them in 2 batches. Start by placing 10 patties in the air fryer basket on a piece of parchment paper. Cook them at 340°F for 15 minutes, then lift them very carefully (they will still be a bit soft) and also remove the parchment paper. Put the patties back in the basket, flipped, and cook for another 15 minutes at 340°F. If you want them more golden, leave them a few more minutes to cook. Repeat for the other 10 patties. In the end, you can put them all together in the basket for 5 minutes since you no longer risk them sticking together.

  • Place the patties on a baking tray lined with parchment paper and bake them at 350°F-400°F for about 30-40 minutes, turning them halfway through. Depending on the oven, it may be necessary to cook them a little longer.

  • And here the vegan lentil and potato patties are ready! Beautiful and tasty, they contain carbohydrates and protein, a side of vegetables and dinner is ready!

  • We tasted them hot, warm, and cold. Warm is better, but we enjoyed them straight out of the air fryer and later cold! They are really tasty, with a crispy outside and soft inside…

Tips

As mentioned earlier, these patties are good at any temperature, but we preferred them warm, not hot, so eat them 10 minutes after taking them out.

  • What is nutritional yeast?

    This recipe also includes nutritional yeast, which is a deactivated yeast rich in vitamin B12. It is widely used in vegan cuisine because it gives dishes a cheesy flavor.
