Lentil and Potato Patties

These lentil and potato patties came about, as always happens to me, from having an ingredient at home and wanting to use it. You ask, lentils? Potatoes? No! Parsley! Yes, I had this bunch of parsley ordered online by mistake (I usually get the plant) and wanted to use it…

Parsley calls for potatoes, and then we need some protein, right? Chickpeas or lentils? I decided on lentils, so let’s make some patties. So here I prepared these tasty vegan patties as always in my beloved air fryer, the Philips XXL Airfryer.

I know I shouldn’t say this here on my blog, but I think these patties would be much tastier fried, but we’ll settle for the oven, pretend I didn’t even write it!!! Indeed, I’ll gloss over this non-dietary portion and move straight to the recipe

For other vegan patties or for an ideal side dish for the patties, here’s what I suggest:

Ingredients

  • 10 oz cooked lentils (start with about 2.8 oz dry lentils)
  • 1.1 lbs potatoes (I don't peel them because the skin is healthy!)
  • 1 carrot
  • 1 onion
  • 2 cloves garlic
  • 0.18 oz nutritional yeast
  • 1 tsp ground cumin
  • 1 tbsp soy sauce
  • 1 bunch parsley
  • 1 tbsp extra virgin olive oil (1 tablespoon goes in the mixture and 1 teaspoon is for cooking. Use measuring spoons!)
  • to taste thyme (ground)
  • 1 tsp salt
  • Total points = 20 WW points
  • Points per patty = 1 WW point

Steps

As always, prepare and measure all the ingredients, please!

  • Start with the potatoes, which should be thoroughly washed with the appropriate brush, cut into cubes, and boiled in lightly salted cold water for 10-15 minutes, just until they are soft. Mash them and let them cool.

  • Put the onion, carrot, and garlic, cut into pieces, dried thyme, cumin, and parsley into the blender. Add the well-drained lentils, soy sauce, salt, and oil and pulse blend. It’s better if there are some small pieces left, so the patties will have some texture that, in my opinion, makes them tastier.

  • Place the mixture in a bowl, add the nutritional yeast, and the now-cold mashed potatoes, and mix well with your hands. Taste and adjust salt if needed.

  • Form slightly flattened patties. I use the gadget for making ice cream balls, which is very handy for making patties more or less the same size. And with this gadget, I got 20. If you want, you can make 40 small ones, to your liking! Brush the patties on both sides with a little oil. 1 teaspoon will be enough for all the patties.

  • For 20 patties, cooking has to be done in 2 batches. Start by placing 10 patties in the air fryer basket on a piece of parchment paper. Cook them at 340°F for 15 minutes, then lift them very gently (they will still be a bit soft) and remove the parchment paper too. Place the patties back directly into the basket, turn them over, and cook for another 15 minutes at 340°F. If you want them more golden, leave them to cook for a few more minutes. Repeat for the other 10 patties. In the end, you can put them all together back in the basket for 5 minutes as you no longer risk them sticking to each other.

  • Place the patties on a baking sheet lined with parchment paper and bake them at 355-390°F for about 30-40 minutes, turning them halfway through cooking. Depending on the oven, it may be necessary to let them cook a bit longer.

  • And here the vegan lentil and potato patties are ready! Beautiful and delicious, they contain carbohydrates and proteins, a side of vegetables, and dinner is ready!

  • We tasted them hot, warm, and cold. They are tastier when warm, but we gladly devoured them right out of the air fryer and later cold! They are really flavorful, with a crust on the outside and soft inside…

As previously mentioned, these patties are good at any temperature, but we preferred them warm, not hot, so eat them 10 minutes after taking them out of the oven.

I haven’t tried it, but I am sure that if they are then allowed to soak in a simple tomato sauce, they will be delicious!
