White zucchini parmigiana in the microwave is a complete dish, ready in a few minutes thanks to microwave cooking. Unlike the zucchini parmigiana in the microwave, this version is tomato-free and the zucchini are not pre-cooked. Thinly sliced zucchini, cooked ham and provola, a touch of seasoning and breadcrumbs, and into the oven. In 16 minutes of microwave cooking, the white zucchini parmigiana is ready to be served.

Ingredients to make the white zucchini parmigiana
- 4 zucchini (medium-large (about 1.5 lb))
- 4 pinches salt
- 4 slices cooked ham
- 11 oz provola (or white scamorza)
- 2 tablespoons breadcrumbs (seasoned)
- 2 drizzles extra virgin olive oil
- 2 tablespoons grated Grana Padano
What you need
- 1 Microwave oven
- 1 Microwave-safe baking dish in ceramic or Pyrex
- 1 Mandoline
- 1 Colander
How to cook the parmigiana in the microwave
To begin, wash the zucchini, trim the ends and slice them with the help of a mandoline. Put them in a colander, add the salt, mix and let rest for 30 minutes so that the zucchini soften and release their water.
Squeeze the zucchini well, pressing them between your hands. Season the bottom of the baking dish with a little oil and some breadcrumbs. Then distribute one third of the zucchini; if you sliced them very thin, you can overlap them. Add two slices of ham on top and a little provola. Continue with another layer of zucchini.
A layer of ham and a layer of provola. Finally, cover with the last layer of zucchini. Season the surface with oil, a little breadcrumbs and the grated cheese.
Clean the edges of the baking dish to avoid unsightly stains. Place the zucchini parmigiana in the microwave and start cooking for 16 minutes using the combined microwave + grill function, selecting, if possible, the maximum power.
At the end of cooking, let the parmigiana rest inside the turned-off microwave for 5 minutes and then serve.
*Did you know that at the end of cooking it is always recommended to let dishes rest for a few minutes with the microwave turned off? This way the heat distributes more evenly.
To reduce waste, I recommend preparing a few jars of zucchini parmigiana cooked in jars; you can store it for up to 15 days.
