Bunny Cookies with Yogurt Shortcrust

Bunny cookies with yogurt shortcrust: easy and delicious little treats made with a light yogurt shortcrust. I’m sharing these very soft cookies that vaguely resemble the shape of a bunny, perfect for bringing a touch of cheer to the table. I made these treats with my yogurt shortcrust, a versatile and fluffy base that lends itself to many variations.
For this recipe I chose a vanilla-flavored yogurt, but you can use the flavor you prefer or opt for plain yogurt, depending on your taste. These cookies are extremely easy to prepare and truly indulgent, ideal for a special snack or breakfast. You’ll see they’ll be enjoyed by everyone, adults and children alike!

Ingredients for the bunny cookies with yogurt shortcrust

  • 2 1/2 cups 00 flour (I used type 1 flour)
  • 1/2 cup yogurt
  • 6 tbsp + 1 tsp granulated sugar
  • 6 tbsp vegetable (seed) oil (neutral-flavored)
  • 2 tsp baking powder

Steps for the bunny cookies with yogurt shortcrust

  • In a bowl, work the yogurt together with the sugar, then add the oil.

    Also add the baking powder and the flour sifted beforehand.

    The dough will be soft and homogeneous.

    Take small pieces of dough of about 45–50 g (about 1.6–1.8 oz) each and shape them into logs roughly 10 inches long, then twist them around themselves. I added a small chocolate at the end.

  • Place the bunnies on a baking sheet lined with parchment paper and bake in a preheated conventional oven at 356°F for 20 minutes.
