Rustic Eggless Cookies

The Rustic Cookies without eggs demonstrate that with very few ingredients you can achieve an amazing result! For this preparation I chose to use type 2 flour, which gives a more authentic flavor, but you can easily substitute it with type 1 flour or whole wheat flour.
These cookies contain neither eggs nor butter; they are crunchy on the outside and pleasantly soft on the inside. A very simple recipe to make with guaranteed results, perfect for a healthy breakfast or snack.

Ingredients for the rustic eggless cookies

  • 1 2/3 cups type 2 flour (or whole wheat)
  • 1/4 cup whole cane sugar (or cane sugar or granulated)
  • 1/4 cup milk
  • 3 tbsp vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder

Steps for the rustic eggless cookies

  • In a large bowl, combine and work together the flour (choose type 2, type 1, or whole wheat), the baking powder, and the sugar. Mix the dry ingredients well.
    Add the vegetable oil, the milk, and a pinch of salt. Mix all the ingredients with your hands or a spatula until you form a smooth dough.
    At this point, if you like, add chocolate chips or chocolate shavings. Incorporate the chocolate into the dough, working it briefly.
    On a lightly floured surface, place the dough and gently press it with your hands or a rolling pin to form a rectangle about half a centimeter thick (about 3/16 inch, approximately 0.2 in).
    Using a knife (or a pastry wheel), cut into sticks or whatever shape you prefer for your cookies.

  • Place the sticks on a baking sheet lined with parchment paper or a silicone mat. Bake in a preheated conventional oven at 356 °F for about 20 minutes. The cookies will be ready when they are golden at the edges.
