Crispy Cookies without Eggs and without Butter.
I offer you an easy and quick recipe that brings great satisfaction. These crispy cookies are egg-free and butter-free. Ingredients for the crispy cookies
As I mentioned, for this preparation I used a stone-milled whole einkorn spelt flour, which gives a rustic and authentic flavor.
Important note: If you decide to use a different type of flour, pay close attention to the dough consistency. Each flour absorbs liquid differently: if the dough is too wet, add a bit more flour; if it’s too dry, add a few tablespoons of water until you get the right elasticity.
- 1 7/8 cups flour
- 1/2 cup powdered sugar (or granulated)
- 3 1/2 tbsp vegetable oil
- 2 2/3 tbsp water
- 2 tsp baking powder
- 1/4 cup dark chocolate chips (or chunks)
Steps for the crispy cookies
Place the flour, sugar and baking powder in a bowl, then mix well with a fork.
Add the oil and the water, working the ingredients together until you obtain a homogeneous dough. I also added some dark chocolate chips. If you use a different flour and the dough is too wet, add flour; conversely, add a little water.
Once all the ingredients are combined, shape the dough into a log, slightly flattening the sides and lengthening the shape with your hands.
Using a knife, cut the log into cookies about 5/8 inch thick and place them on a baking sheet lined with .
Bake at 356°F in a preheated conventional (non-fan) oven for 20 minutes. Make sure they are nicely golden to ensure maximum crispiness.
Let them cool completely before serving, so they reach the ideal texture.
