Whole Wheat Honey Cookies

Simple and tasty whole wheat honey cookies are the answer for those who, like me, had long searched for whole wheat shortbread that weren’t heavy or dull on the palate. After several attempts, I finally achieved the texture I wanted. These cookies are sweet just enough, perfect to start the day with a healthy breakfast, but ideal for snacking at any time. Ingredients for whole wheat honey cookies

  • 1 2/3 cups whole wheat flour
  • 3 tbsp wildflower honey
  • 1/4 cup extra virgin olive oil (about 1/4 cup (4 tbsp))
  • 1 tsp baking powder (about 1 tsp (≈4 g))
  • 1 tsp vanilla extract
  • 1 egg
  • 2 oz 75% dark chocolate

Steps for whole wheat honey cookies

  • In a bowl, work the egg with the oil and honey, then add the vanilla extract, the flour and the baking powder.

    Mix all the ingredients well and then add the dark chocolate chips.

    Shape the dough into balls, flatten them slightly and place them on a baking sheet lined with parchment paper.

    Bake in a preheated conventional oven at 356°F for 20 minutes.
