Ingredients
- 1/2 cup Vialone Nano rice
- 1 zucchini
- 1 potato
- 1 carrot
- Half stalk celery
- Half onion
- vegetable broth
- 2 cherry tomatoes (optional)
- basil (or parsley)
- extra virgin olive oil

Preparation
Wash the celery, peel the carrot and cut them into small cubes. Trim the onion and chop it.
Wash and peel the potato, then cut it into chunks. Trim the zucchini and cut it into pieces as well.
Pour a drizzle of oil into a saucepan, add celery, carrot and onion, and sauté for a few moments.
Add the potatoes (1), cover with hot vegetable broth and let cook for about 10 minutes.
Then add the rice, the zucchini (2) and moisten with a little more broth.
If you like, peel the cherry tomatoes, remove the seeds and add them to the soup.
Continue cooking for another 15-20 minutes, or until the rice is tender (3). Turn off the stove and flavor to taste with chopped basil or parsley.

Tips and notes
Adding the cherry tomatoes is optional; you can omit them or replace them with a tablespoon of tomato paste.
Use a rice suitable for soups; in my case I chose Vialone Nano.

I don’t recommend it because the rice would tend to become overcooked. However, if you want to get ahead, you can prepare the vegetable base in advance and add the rice later.
