Pasta with Radicchio and Shrimp

The pasta with radicchio and shrimp is a tasty and simple first course to prepare. With few ingredients you’ll serve an irresistible-flavored dish. For a good result it’s important to use fresh, high-quality products, such as Treviso red radicchio and fresh shrimp. For this recipe I cooked the radicchio in a pan with extra virgin olive oil and chopped onion; then I added the shrimp and deglazed with white wine. In no time you’ll make a dish that the whole family will enjoy!

Pasta with radicchio and shrimp

Ingredients

  • 7 oz Pasta
  • 6 oz Radicchio
  • 5 oz Shrimp
  • 1 glass White wine
  • to taste Onion
  • to taste Extra virgin olive oil
  • to taste Salt

Preparation

  • To make the pasta with radicchio and shrimp, wash the shrimp under running water, remove the head, legs and shell, then remove the intestinal tract: cut the shrimp’s back with a knife and pull it out gently, trying not to break it.

  • Clean the radicchio, wash and dry the selected leaves and cut them into thin strips.

  • In a pan over low heat, soften the chopped onion with a drizzle of extra virgin olive oil. Add the radicchio, season with salt and cook until the radicchio is wilted; if necessary add a tablespoon of hot water.

  • Add the shrimp to the pan with the radicchio and deglaze with the white wine. Cook over moderate heat until the shrimp turn pink. Adjust salt and, if necessary, add a tablespoon of hot water.

  • Cook the pasta in plenty of boiling salted water; once cooked (preferably al dente) drain it and pour it into the pan with the shrimp and radicchio.

  • Toss to combine for a few minutes. Serve hot and enjoy!
