With the heat coming I really didn’t feel like turning on the stove for hours 😅 so I prepared this Eolian potato salad, a simple dish full of flavor that immediately evokes Sicily.

Eolian potatoes (Sicilian potato salad) are one of those clever summer dishes that solve lunch and dinner without stress: simple ingredients, few steps and a very fresh result. It’s a perfect recipe among cold potato salads and one of the most loved quick summer dishes of Mediterranean cuisine.

The Eolian salad originates in the Aeolian Islands, a group of volcanic islands in the Tyrrhenian Sea north of Sicily. It is a typical dish of the local peasant cuisine, born as a simple, fresh and nutritious meal, perfect for the hot climate and for those who worked outdoors.

The potatoes combine with typical Aeolian flavors creating a rich, fragrant side dish that is also perfect to take to the beach or for a quick lunch.

Ingredients

  • 1.3 lb potatoes (about 3 medium)
  • 2 cups tomatoes (about 3 medium)
  • 1 red Tropea onion
  • 8 tbsps capers (salt-packed)
  • 3.5 oz black olives
  • 7 oz tuna in oil (drained)
  • salt
  • dried oregano

Steps

  • Boil the potatoes with their skins in salted water (20–30 minutes). Let them cool, then peel and cut into large pieces.

  • Cut the tomatoes into wedges, slice the onion thinly and rinse the capers well to remove the salt.

  • In a large bowl, combine the potatoes, tomatoes, onion, capers, olives and tuna.

  • Dress generously with extra virgin olive oil, salt to taste and a generous sprinkle of oregano. Mix gently and let rest 20–30 minutes before serving: it becomes much more flavorful.
