Ingredients
- 2 zucchini
- 1 tablespoon capers
- lemon juice
- 3 tablespoons extra virgin olive oil
- mint
- salt
- pepper
- 1 cup cherry tomatoes (red and yellow)
- 1 cup arugula
- 3 tablespoons black olives
Steps
Wash the zucchini and slice them very thinly lengthwise (with a mandoline or a knife). Place them in a bowl and dress with lemon juice, a pinch of salt and pepper; let rest 20-30 minutes.
Drain the tuna well and break it into large pieces with a fork. Cut the tomatoes in half and add everything to the marinated zucchini; add arugula, tuna, olives and capers.
Finish with extra virgin olive oil, mix gently and taste to adjust salt and pepper.
