Asparagus and Speck, with 2 Ingredients You Have a Side Dish that Rocks

Asparagus and speck are a light and tasty side dish. Since I’ve been preparing them this way, not a single one is left! They all brush them off in an instant.

And fortunately, preparing them is very simple, with just 2 ingredients and in a few minutes I have a side dish that rocks!

Moreover, asparagus are the personal trainers of our intestines: light, purifying, and full of fiber.

Speck is the good ‘bad boy’: smoked, bold, but with less fat than many other cold cuts.

Just a few minutes and you have a dish that looks like it came out of a mountain restaurant and you can cook them either in the oven or in an air fryer.

Fresh spring asparagus taste of sun, green meadows, and the end of winter boredom. If you add speck from South Tyrol… it’s like putting on boots and climbing to a mountain hut.

It’s one of those dishes that fills you up, but doesn’t knock you out on the couch. Perfect for saying ‘I ate well’ without a guilty conscience.

Ideal to serve not only as a side dish but also as an appetizer.

Ingredients for Preparing Asparagus and Speck

  • 1.1 lbs asparagus
  • 3.5 oz speck
  • to taste fine salt
  • to taste extra virgin olive oil

  • 1 Baking Tray

Steps for Preparing Asparagus and Speck

To prepare the delicious asparagus and speck, wash the asparagus thoroughly under running water and remove the hardest part of the stem. Bend the asparagus and it will break at the right point.

If you’re using white or very thick ones, peel them slightly with a vegetable peeler from halfway down

Bring a pot with plenty of salted water to a boil and cook the asparagus for about 8 minutes. They should come out crispy and tender.

Drain them and cool them by immersing them in cold water to maintain their color and consistency.

  • Line a baking tray, or the basket of the air fryer, with parchment paper and lay two slices of speck and place 3 or 4 asparagus in the center. Wrap them with the cold cut. Place them on the tray and bake at 356°F for 10-15 minutes or in the air fryer at 392°F for 5 minutes.

Storage and Tips

You can add Parmesan flakes or balsamic vinegar drops for an extra touch

If there are leftovers, store them in the fridge for two days in an airtight container

Before serving, I recommend heating them in the oven or air fryer for a few minutes at 356°F
