Hasselback Chicken is a dish named after a Swedish restaurant that invented this accordion cut, especially known for potatoes.
The chicken breast is cut multiple times without actually separating the meat at a distance of about half an inch and then stuffed with melting cheese, vegetables, and more!
A very appetizing second course really delicious of which I leave you the ingredients but not the quantities to give you only general guidelines for this tasty recipe that you will complete based on your personal tastes…
PLEASE REMEMBER chicken meat should not be washed because contrary to what is believed, washing not only removes nothing but increases contamination!!!!!
ALSO PAY ATTENTION TO COOKING which must be done properly so that the heat penetrates inside the meat and destroys its bacterial load Escherichia Coli is killed by temperatures above 176°F heat that destroys any produced toxins.
A method not to use with this type of meat is the microwave because the heating of the meat is not done evenly and this does not ensure that the meat is healthy and suitable for consumption.
Variants Instead of raw ham, you can use speck, instead of grilled zucchini, you can insert arugula, which with its bitter taste goes very well, and instead of scamorza, you can insert Asiago and/or mozzarella… The dish is simple but very delicious, and I believe it can also be liked by the little ones at home!

- 1 chicken breast
- to taste raw ham
- to taste grilled zucchini (I had them in the fridge!)
- to taste scamorza cheese
- to taste extra virgin olive oil
- to taste thyme or oregano
- to taste salt and pepper

Preparation for HASSELBACK CHICKEN
Clean the chicken breast from cartilage and fat filaments and cut it in half.
On each half, make decisive cuts without slicing the chicken meat.
Make other cuts about 1/2 inch apart along the entire length of the piece of meat.
In each slot, place ham, zucchini, and scamorza cheese.
Salt, pepper, and add a little extra virgin olive oil.
Place the Hasselback chicken on a baking tray lined with parchment paper and bake in a preheated oven at 356°F for about 30 minutes or according to your appliance’s characteristics.
Cook the Hasselback chicken perfectly so that it remains moist and succulent.
Compose the plates by adding the sauce that has formed during cooking, add a sprig of thyme, and serve at the table still steaming hot, allowing the juices to redistribute in the meat for a moist and delicious result!
Serve with boiled potatoes, gratinated tomatoes, grilled zucchini (oops… I made quite a few yesterday), or a simple seasonal salad!
