This recipe is widely used in Abruzzo and is mainly prepared in the L’Aquila area for the Sagra dei ceci di Navelli (AQ), one of the Abruzzo towns where the chickpea is famous for its very small size and excellent flavor.
If you’re lucky enough to buy the chickpeas I mentioned, the recipe will surely be exceptional; otherwise use what you have and you’ll still appreciate the result.
This recipe doesn’t require much preparation — just soak the chickpeas for about 3 hours, then cook them with sugar for about 20 minutes, depending on many factors.
One thing I must recommend is to use a good sugar, like Eridana; other sugars (I’ve tried almost all) that are poor quality often gave me problems because the sugar doesn’t stick to the chickpeas.

Ingredients to make Chickpeas with Sugar
- 3 cups dried chickpeas
- 3 cups sugar
- grated lemon zest (optional)
- 1 cup water
Preparation of Chickpeas with Sugar (Abruzzo)
Soak the chickpeas for about 3 hours. After soaking, drain them and take a pan with high sides (at least about a palm’s width — roughly 3.5 inches). Measure the quantities with a cup.
Put 3 cups of chickpeas, 3 cups of sugar, the grated zest of one lemon and 1 cup of water!
When the chickpeas are cooked so that the sugar adheres well to them, remove the pan from the heat and continue stirring for a couple of minutes, then spread them out on a wooden board so they don’t stick together and let them cool.
The cooking will take about 20 minutes.
