Chickpeas with Sugar

Chickpeas with sugar are one of those tasty recipes where once you eat one, you can’t stop.
Perfect for those moments when you just want to snack on something!!!
This recipe is very popular in Abruzzo and is especially prepared in L’Aquila during the Navelli Chickpea Festival (AQ), one of the Abruzzese towns where the chickpea is very famous for its very small size and truly delicious taste.
If you’re lucky enough to purchase the chickpeas I’ve talked about, the recipe will surely be exceptional, otherwise use what you have and you’ll appreciate the result.
A recipe that doesn’t require much preparation, just soaking the chickpeas for 3 hours, then cooking them with sugar for about 20 minutes, depending on many factors.
One recommendation is to use a good sugar, like Eridania, as other cheaper sugars (almost all tried) have often caused me problems, because the sugar doesn’t stick to the chickpeas.
So follow my step-by-step photo recipe and let me know how yours turned out!
If you make this recipe of mine, send me the photos and I’ll publish them on my page with your name.

  • 3 cups sugar
  • grated lemon peel (optional)

Preparation of Chickpeas with Sugar (Abruzzo)

  • Soak the chickpeas for about 3 hours, then drain them. Take a pot with high sides (at least a palm’s length), measure the ingredients with a glass.
Put in 3 cups of chickpeas, 3 cups of sugar, the grated zest of one lemon, and 1 cup of water!

  • When the chickpeas are cooked so that the sugar sticks well to them, remove the pot from the heat and continue to stir for a couple of minutes. Then spread them out on a wooden board to cool, ensuring they don’t stick together too much.

  • Cooking will take about 20 minutes.

My name is Francesca Mele, and "Lo scrigno del buongusto" is the name of my blog. I am a true Abruzzese, and after several years with a cooking website, I decided to start a blog. I have been online for a total of 12 years now, so many of you have known me for a long time! I love cooking and I am neither a chef nor a professional cook; I simply have a passion for cooking, preparing, and inventing new dishes. The recipes you find on my blog are not copied, and even the photos are not downloaded from the internet; they are my own.
