Orange Cloud Cake

The orange cloud cake is a delicious pantry-friendly cake, easy to make and very indulgent.

Lactose-free, quick and simple to prepare, with orange juice and zest, it’s perfect for any moment—breakfast, snack, or after a meal—very soft and light.

Ingredients

  • 4 eggs
  • 7/8 cup sugar
  • 3.4 fl oz vegetable oil
  • 2/3 cup orange juice
  • orange zest (grated from one orange)
  • 1 1/2 cups 00 flour (all-purpose flour)
  • 1/2 cup potato starch
  • 1 packet baking powder
  • powdered sugar (for decorating)

Preparation of the orange cloud cake

  • In a large bowl, whisk the eggs with the sugar and the grated zest of one orange.
    When the mixture is pale and fluffy, add the vegetable oil in a thin stream and the orange juice, continuing to beat with electric beaters.

  • Gently fold in the sifted potato starch and flour using a spatula with soft upward motions.
    Add the sifted baking powder as well, folding with a spatula until you obtain a homogeneous batter.

  • Pour the batter into an 8.7-inch (22 cm) diameter pan lined with parchment paper and bake in a conventional oven at 356°F (180°C) for about 40 minutes, checking with a toothpick to ensure the cake is cooked.
    Remove from the oven, let cool completely in the pan, then transfer your orange cloud cake to a serving plate.
    Dust with powdered sugar as desired and serve.
