Orange Cloud Cake

The orange cloud cake is a delightful pantry cake, easy to make and very tasty.

Lactose-free, easy and quick to make, with orange juice and zest, it’s perfect for any time, from breakfast, to snack, to after meals, very soft and light.

Ingredients

  • 4 eggs
  • 180 g sugar
  • 100 ml vegetable oil
  • 150 ml orange juice
  • orange zest (grated from one orange)
  • 180 g all-purpose flour
  • 60 g potato starch
  • 1 packet baking powder
  • powdered sugar (for decoration)

Preparation of the Orange Cloud Cake

  • In a large bowl, whip the eggs with the sugar and the grated zest of one orange.
    When your mixture is light and fluffy, slowly add the vegetable oil and orange juice while continuously mixing with the electric beater.

  • Fold in the sifted potato starch and all-purpose flour with a spatula, using gentle movements from bottom to top.
    Add the sifted baking powder as well, still with a spatula, and mix until you get a smooth batter.

  • Pour the obtained batter into a 9-inch diameter cake pan lined with parchment paper and bake in a static oven at 350°F for about 40 minutes, using the toothpick test to ensure the cake is done.
    Remove from the oven, let cool completely in the pan, and then transfer your orange cloud cake to a serving plate.
    Sprinkle with powdered sugar as desired and serve.
