The crunchy cookies and chocolate is a super indulgent and very chocolatey dessert, very simple and quick to prepare. Easter is already over and you surely have leftover chocolate from Easter eggs; to reuse some, I wanted to prepare this delicious treat with mixed nuts, also adding some cookies I needed to use up. The result? A simple, crunchy and tasty little sweet perfect for breakfast, snack time or as a treat — absolutely delicious!

- 10.6 oz (about 2 1/2 cups) mixed nuts
- 8.8 oz (about 1 1/2 cups) chocolate
- 3.5 oz (about 1 cup crushed) cookies
Steps
The crunchy cookies and chocolate is very simple and super quick to make; I prepared it in an air fryer, but you can also use a conventional oven. First, line the air fryer basket with parchment paper, add the mixed nuts you prefer and toast them at 356°F for 5 minutes (in a conventional oven, at 356°F for 10 minutes).
Add the chocolate you prefer (milk, white and/or dark — a mix works fine) and heat at 167°F for 6–7 minutes; the chocolate will melt completely.
Using a skewer, “move” the chocolate to spread it evenly over all the nuts and sprinkle the crumbled cookies on top (I used Digestive). Press down a little so they adhere.
Let the crunchy cookies and chocolate solidify at room temperature (or in the fridge if you want to speed things up) and break it into pieces as soon as it has hardened.
Tips:
The crunchy cookies and chocolate keeps at room temperature for a couple of weeks. Obviously you can use any type of chocolate; if you use a chocolate bar or a chocolate thicker than Easter egg chocolate, heat it for 3–4 minutes longer (so about 10 minutes in total). Use whatever you have, even a mix. The same goes for the cookies — use your favorites. If you don’t have an air fryer, use the oven, or melt the chocolate in a double boiler or in the microwave and then combine it with the other ingredients.
