The yogurt mini loaves with olives and cheese are very quick small loaves of bread, soft, crunchy and tasty, made with a yogurt dough enriched with Taggiasca olives and grated scamorza. I had expiring yogurt and scamorza, and olives to use up, so I decided to make delicious and soft rolls with no rising that were gone in no time! The yogurt mini loaves are perfect as a substitute for bread, as an appetizer, or for an aperitif. They’re addictive and you can either leave them plain or enrich them with the ingredients you prefer. Definitely a recipe to try!

Ingredients
- 2 cups + 2 tbsp all-purpose flour (00)
- 1/2 cup + 1 tsp plain (unsweetened) yogurt
- 1/3 cup (chopped) pitted olives
- 3 tbsp + 1 tsp water (room temperature)
- 1/4 cup (grated) scamorza cheese
- 1 packet instant baking powder for savory preparations
- to taste salt
- to taste re-milled durum wheat semolina
- to taste extra virgin olive oil
Steps
The yogurt mini loaves with olives and cheese are very simple and very quick to prepare. First, put the unsweetened plain yogurt, room-temperature water, flour, baking powder, oregano, and salt in a bowl and form a fairly homogeneous dough ball.
Fold the chopped pitted olives and the scamorza grated with a coarse grater into the dough.
Roll the dough out on a surface lightly dusted with semolina flour into a long rectangle, then cut into mini loaves about 1 1/8 inches thick (3 cm).
Transfer the yogurt mini loaves to a baking sheet lined with parchment paper, spray them (or brush them, if you don’t have a spray) with a little extra virgin olive oil and bake in a preheated oven at 392°F (200°C) for about 20 minutes, until golden.
Tips:
The yogurt mini loaves can be stored at room temperature for 3-4 days; they remain soft. To make them crispy again like when freshly baked, warm them in the oven or in the air fryer for a few minutes. You can also cook them in the air fryer at 356°F (180°C) for about fifteen minutes. Customize them with ingredients you prefer: sun-dried tomatoes, walnuts, only cheese, small pieces of cured meats, or leave them plain.
