Ingredients for beef stew in tomato sauce

  • 1.5 lb Beef stew meat, cut into bite-sized pieces
  • 10.6 oz Potatoes (about 3 medium)
  • 1 cup Carrots, peeled and cut into large pieces
  • 1 Onion
  • 0.75 cup Tomato purée (passata)
  • 5 tbsp Extra virgin olive oil
  • to taste Salt
  • to taste Pepper
  • as needed Water

Preparation: beef stew in tomato sauce

  • To prepare the beef stew in tomato sauce, first, if you bought a whole piece of beef, cut it into bite-sized pieces that are not too small, removing excess fat but leaving enough to make the dish flavorful.

  • Peel and wash the potatoes and carrots and cut them into large chunks roughly the same size as the stew pieces. Set aside.
    Peel and finely chop the onion.

  • In a heavy-bottomed pot heat the extra virgin olive oil and lightly sauté the onion for a few minutes without letting it brown. Add the meat, stir with a wooden spoon to season, and brown on all sides.

  • When the meat is well browned, add the potatoes and carrots, the tomato purée, season with a pinch of salt and loosen with a little hot water, then cover with the lid.

  • As soon as everything begins to simmer, lower the heat and continue cooking with the lid on for at least 1 hour and 15 minutes, always checking that it does not stick to the bottom of the pot and that it does not dry out too much. If it does, add more hot water.

  • After about 1 hour of cooking, remove the lid, check the doneness of your beef stew in tomato sauce, adjust the salt, season with a little pepper and finish cooking over the lowest heat for the time necessary to have a tender, juicy and tasty stew and..
