Ingredients for Pasta with tuna and tomato
- 11 oz pasta (the shape you prefer)
- 6 oz tuna in oil (canned)
- 1 tbsp capers
- 2 oz black olives (pitted)
- 3 fillets anchovies in oil
- 1 1/3 cup cherry tomatoes
- 1/2 cup tomato purée (passata)
- 3 tbsp extra-virgin olive oil
- 1 clove garlic
- to taste salt
- 1 bunch parsley
How to prepare Pasta with tuna
Pour 3 tablespoons of extra-virgin olive oil into a large skillet, add one minced clove of garlic, the drained tuna from its oil and the anchovy fillets cut into small pieces. Sauté over medium heat for 1–2 minutes.
Now add the tomato purée, the cherry tomatoes cut into quarters, the black olives sliced and the capers. Add a pinch of salt and let the tuna sauce simmer for 8–10 minutes over low heat. Meanwhile, cook the pasta (I use fusilli) in plenty of salted water.
Drain the pasta al dente and toss it directly into the skillet with the sauce. Add a pinch of pepper and the chopped parsley. Mix and serve Pasta with tuna and cherry tomatoes.
