Baked Anchovy Tart is a simple and exquisite second course. The recipe I want to tell you about today features anchovies. A second course that smells of the sea and of deliciousness. The only difficulty of this dish lies in cleaning the fish and removing the head and backbone. But you can do it in advance—for example, when I have the time and mood I clean a few and keep them vacuum-packed and then in the freezer. This way they keep perfectly and are already ready when needed. A simple coating with bread crumbs makes them truly wonderful. Ingredients for the Anchovy Tart
- 18 oz anchovies
- 2/3 cup bread crumbs
- 1/2 cup Parmesan cheese (grated)
- to taste extra virgin olive oil
- 2 cloves garlic
- 1 bunch parsley
- to taste salt
How to prepare the Anchovy Tart
Open the anchovies, remove the entrails, backbone, head and tail. Rinse the anchovy fillets under running water and pat them dry on kitchen paper. Break the bread crumbs into small pieces in a bowl.
Add the chopped parsley, the grated Parmesan and the garlic cut into small pieces. Add a drizzle of extra virgin olive oil and mix. Preheat the oven to 392°F. Oil a baking dish. Arrange a layer of anchovy fillets, slightly overlapping them.
Lightly salt and cover with two-thirds of the bread crumbs. Cover with the remaining anchovies and lightly salt again. Spread the remaining bread crumbs on top. Drizzle with a little extra virgin olive oil and bake the Anchovy Tart in the hot oven (conventional) for 20-25 minutes.

Loredana’s Tips
If you prefer, you can add 2 tablespoons of capers to the bread crumbs and, if you like a slightly sweet flavor, one tablespoon of raisins.
