Ingredients

  • 2 egg yolks
  • 1.25 tbsp cornstarch
  • 4 tbsp sugar
  • 3/4 cup + 1 tbsp (200 ml) milk
  • 1 packet vanillin powder
  • 7 tbsp pistachio paste
  • 6 tbsp all-purpose flour
  • 3 tbsp + 1 tsp sugar
  • 3.5 tbsp butter (cold)
  • 4 tbsp unsweetened cocoa powder
  • pistachio spread (to taste)
  • chopped pistachios (to taste)

Steps

  • First, prepare the pistachio custard. Heat the milk in a saucepan without bringing it to a boil. Then separate the egg whites from the yolks and place the yolks in a bowl. You can use the egg whites to make an omelet or meringues. Add the sugar and the vanillin to the yolks and whisk with a hand whisk. Then add the cornstarch and continue whisking the mixture until all ingredients are combined.

    Gradually add the previously heated milk, little by little, while continuing to whisk. Transfer everything to the saucepan and cook over low heat for 5 minutes, stirring constantly, until the custard thickens and reaches a glossy, velvety consistency.

    Pour the custard into a bowl, immediately add the pistachio paste and mix until well combined and homogeneous. Cover with plastic wrap directly on the surface and let it cool at room temperature. Then transfer it to the refrigerator.

  • While the custard cools, prepare the crumble. Put the flour and the unsweetened cocoa powder in a bowl. Add the sugar and cold butter from the refrigerator cut into small pieces. Crumble everything with your hands until you get coarse crumbs. Spread the crumble on a rectangular baking pan lined with parchment paper (about 12 x 16 in). Bake in a preheated oven at 356°F (static mode) for 20 minutes, or until the crumbs are crispy. Once baked, remove from the oven and let cool.

    As soon as the crumble has cooled, you can assemble the dessert. Spoon some custard into the serving cups. Add a layer of cocoa crumble, more custard and another layer of crumble.
