LINGUINE WITH WILD ASPARAGUS AND SPECK: easy and quick spring-flavored recipe

Ingredients

  • 12 oz linguine
  • 7 oz wild asparagus
  • 4 oz speck, cut into strips
  • 1/2 chopped onion
  • 1 pinch garlic powder
  • to taste salt
  • to taste olive oil

Tools

  • Wooden spoon
  • Frying pan
  • Colander / pasta pot

Steps

  • Remove the toughest part of the asparagus and cut them into not-too-large pieces.

  • In a frying pan, sauté the onion for a few minutes.

  • Add the speck and cook for about 5 minutes.

  • Add the asparagus and cook for about 15 minutes. Meanwhile, boil the linguine in plenty of salted water for the time indicated on the package.

  • Add the cooked linguine to the asparagus, toss together and serve.

Variations

✨ You can puree part of the asparagus to obtain a creamier sauce.

✨ You can replace speck with pancetta or guanciale.

✨ For a milder version, add a tablespoon of ricotta or robiola when tossing.
