Ingredients

  • 1/3 cup (≈3.4 fl oz) whole milk
  • 0.35 oz milk kefir grains

Tools

  • 1 Strainer plastic
  • 1 Spoon plastic
  • 1 Jar glass

Preparation

  • This is a beverage made from milk naturally fermented by yeasts and bacteria, commonly known as probiotics.

    It appears as a collection of white granules called kefiran. Kefiran is primarily composed of saccharides (glucose and galactose). It does not contain lactose and can be consumed by those who are lactose intolerant.

  • To prepare good kefir, simply obtain the grains, available from companies that specialize in producing and selecting the microorganisms they contain, or ask someone you know to give you some.

  • Place the grains in a glass container and add milk, which can be cow’s milk but also sheep’s or goat’s milk.
    The container should not be sealed airtight to allow the carbon dioxide produced during fermentation to escape.
    Leave at room temperature for twenty-four hours, then strain using plastic utensils.

  • Its taste is slightly tangy, but we can correct it with honey, jam or fruit.
    The probiotics present in kefir, being able to resist the attack of gastric juices, arrive intact in the intestine, where as “good” bacteria they enrich and rebalance the intestinal flora, bringing numerous benefits for the gut, cholesterol levels, the immune system and the liver.
