Ingredients

  • 1 1/4 cups (about 8.8 oz / 250 g) Vialone Nano rice
  • 3 1/2 tbsp (about 1.8 oz / 50 g) butter
  • 1/3 cup chopped (about 1.8 oz / 50 g) chopped onion
  • 1 2/3 cups (about 13.5 fl oz / 400 ml) vegetable broth (or water)
  • to taste salt and pepper

Preparation

  • Add the rice and stir until it has absorbed some of the seasoning;

    Pour in the boiling broth, add salt and pepper, and stir;

    Close the pressure cooker, and when it starts to hiss reduce the heat and cook for 7 minutes;

    After this time, open the cooker, fluff the rice and serve it as a side dish.

If you want a more intense aroma, you can combine the onion with other aromatics (bay leaf, lemon zest, cumin, a drizzle of butter at the end of cooking).
