    Let the wine evaporate for a few moments, stirring constantly, then turn off the heat and add another 2 tablespoons of extra virgin olive oil. Mix well and let this dressing cool slightly — it will be used to dress the salad.

    Cut each slice of prosciutto in half horizontally (you will obtain square pieces) and place them on a cutting board. Using a teaspoon, distribute the spreadable cheese over the prosciutto slices and roll each slice into a little roll.

    Wash and dry the lettuce, tear it into pieces and put it in a large bowl, then add the drained chickpeas.

    Dress the salad with half of the dressing you prepared; if needed, adjust the salt and mix everything gently. Arrange the prosciutto rolls on top and drizzle them with the remaining dressing.
