In a bowl, whisk the eggs with the sugar, a pinch of salt and the grated lemon zest until you obtain a light and creamy mixture. Add the yogurt, a little vanilla and blend. Add the milk and oil, then incorporate the flour. Add the baking powder and mix well. Finally add the cleaned and chopped strawberries and gently fold them in. Spoon the batter into the muffin tins (filling to about 3/4). Bake in a preheated conventional oven at 356°F for 25–30 minutes. Let cool and serve.
