The couscous with tuna and sun-dried tomato pesto is a hearty first course that can be made in just a few minutes.
Couscous is perfect for when you don’t feel like cooking pasta or rice, since it only takes about 5 minutes to prepare. It can also be a tasty first course if dressed with flavorful ingredients, just like in this case: a pesto made from sun-dried tomatoes, capers, green olives and walnuts.
To make it more satisfying I then added tuna and feta cut into cubes. In a short time and with a few steps you’ll bring a delicious dish to the table that the whole family will love!

Ingredients
- 2/3 cup Couscous
- 1/2 cup Water
- 4 Walnuts
- 1 tablespoon Capers
- 4 Sun-dried tomatoes
- 10 Green olives in brine
- 2 Tuna fillets
- 3/4 oz Feta
Preparation
To make the couscous with tuna and pesto, pour the couscous into a pot (or bowl) and wet it with the boiling water. Cover with a lid and let it rest for 5 minutes. Then, using a fork, fluff the couscous.
In a blender, add the sun-dried tomatoes, green olives, capers and walnuts. Blend until finely chopped. Cut the feta into cubes and drain the tuna.
In a large bowl place the couscous, add the sun-dried tomato pesto and start mixing with a spoon. Then fold in the tuna, flaked with a fork, and the feta. Serve and enjoy!
