I wanted a fresh but super indulgent dessert 😍 and with some strawberries, mixed berries and a bit of chocolate at home I made these mini strawberry and mixed berries chocolate cheesecakes, which immediately became the favorite weekend dessert.

These easy and quick strawberry and mixed berries chocolate cheesecakes are creamy, fresh and have that crunchy base that is addictive. Perfect if you’re looking for quick single-portion desserts for parties or Sunday, but also if you just want something delicious after lunch.

This recipe is ideal when you want to prepare an elegant but easy dessert: the contrast between the soft cream, fresh berries and crunchy chocolate creates a perfect balance.

Ingredients

  • 7 oz (about 2 cups) cocoa cookies
  • 6 tbsp butter
  • 2/3 cup whipping cream
  • 1 oz dark chocolate
  • 2 oz (about 1/2 cup sliced) strawberries
  • 2 oz (about 1/2 cup) mixed berries

Steps

  • Put the cookies in a food processor and crush them, then add the butter and pulse again.
    Press the cookie mixture into a muffin tin lined with plastic wrap or parchment paper, and place in the freezer.

  • Chop the chocolate into pieces and add it to the cream.

  • If you use frozen berries, cook them in a small saucepan with 1 tablespoon of water, then let cool and add them to the cream. Slice the strawberries and fold them into the cream.

  • Take the tray out of the freezer and fill the cold shells with the cream and fruit, then put them back in the freezer for about a couple of hours. Dust with shredded coconut if you like.
