Carrot and Potato Patties are a tasty and flavorful dish that can be served as an appetizer or as a vegetarian main course, perhaps accompanied by a mixed salad or a yogurt sauce. They can be served at aperitivo or on a buffet alongside other finger foods. Preparing our carrot and potato patties is very easy. First, wash and boil the potatoes. In the meantime, peel and grate the carrots and set them aside. When the potatoes are cooked, mash them and combine them with the other ingredients. - 10.6 oz potatoes (about 2 medium)
- 2 3/4 cups carrots (grated)
- 2 eggs
- 6 tbsp grated Parmesan cheese
- 1/3 cup breadcrumbs
- salt
- pepper
- extra virgin olive oil

Let’s start preparing the carrot and potato patties: place the potatoes with the skins in cold water in a pot and bring to a boil.
Boil the potatoes until they are soft.
Mash the potatoes with a potato masher while they are still hot.Wash the carrots, trim the ends and grate them.
Place the mashed potatoes, the carrots, the eggs and the grated cheese, the breadcrumbs, salt and pepper in a bowl. Mix with a spatula until you obtain a homogeneous mixture.
Form the patties by taking small portions of the mixture and shaping them with your hands into rounds. Now coat the patties in breadcrumbs so they are completely covered.
Arrange the patties on a baking sheet lined with parchment paper and lightly drizzle with extra virgin olive oil. Bake in a preheated oven at 356°F for about 20-25 minutes or in an air fryer until they are golden.Once ready, serve the carrot and potato patties.
