Ingredients
- 1 egg
- 1 egg yolk
- 1/2 cup granulated sugar
- 1/2 cup butter (Soft)
- 2 1/3 cups 00 flour (all-purpose flour)
- 1 zest of 1 lemon
- 2 tbsp lemon juice
- 2 tsp baking powder
- to taste granulated sugar
- to taste powdered sugar
Steps
Start by working the soft butter with the sugar until you obtain a smooth, homogeneous cream — you can use a spatula or a wooden spoon.
Add the egg and the yolk and continue mixing until the mixture is well combined; the egg and yolk must be fully incorporated.
Stir in the grated zest and the lemon juice and mix: you’ll already smell a wonderful aroma!At this point add the flour and the baking powder.
Mix until you get a soft dough, compact but slightly sticky.
Cover with plastic wrap and let rest in the refrigerator for half an hour: this step is essential to make the dough easier to work with.Take the dough and portion small pieces, forming walnut-sized balls.
Roll each ball first in granulated sugar and then in powdered sugar: this double coating will make the cookies look even more attractive and characteristic when baked.Arrange the cookies on a baking sheet lined with parchment paper, spaced well apart.
Bake in a conventional oven at 356°F for about 12-15 minutes.
They should not brown too much: they must remain light and soft!Once ready, let the cookies cool completely.
Serve and enjoy all their softness and the intense lemon aroma.

Use untreated lemons for a more fragrant and natural zest.
If the dough is too soft, leave it in the fridge a few more minutes.
Do not overbake the cookies: they should stay soft inside.
For an even more intense flavor, you can add a few drops of lemon extract. You can also make them with orange by using orange zest and juice.
Store the cookies in an airtight tin: they stay soft for days.
