The pastries turned out well, although the typical Puglian scartellate are quite different. The dough is completely different, however I obtained fragrant and very tasty brioches. 1 package (about 8 oz) ready-to-use puff pastry;

- 8 oz puff pastry (equivalent to one package)
- 1 egg
- 2 oz almonds

Steps
Cut strips of pastry and press intermittently with your fingers as indicated, as you would for the “scartellate,” to obtain rosettes as shown in the image.
Brush on the beaten egg and place the roses gently on a lightly floured baking tray, leaving a little space between each one.
Bake in the oven set to 536°F for about fifteen minutes.Brush the croissants with honey warmed in the microwave for a few seconds, and sprinkle with almond crumbs obtained by pulsing some almonds in a food processor.
