Whole wheat pasta with pumpkin and tomato is a recipe I find truly irresistible, ideal to cook in this autumn period when pumpkins are abundant at the greengrocer’s. Beautifully displayed, they stand out and attract us with their gorgeous bright orange color.
Pumpkin is an ally for a slimming diet. It contains a lot of water and few calories.
Paired with whole wheat pasta, which contains fiber, starches, proteins and minerals, it makes a nutritious and healthy first course.
The particularity of this recipe is also due to the datterini tomatoes which have even more flavor compared to others.

Ingredients
- 11 oz Pasta (Whole wheat penne rigate)
- 2 1/2 cups Pumpkin (peeled)
- to taste Extra virgin olive oil
- Onion (1)
- to taste Parsley
- to taste Salt
- to taste Pepper (ground)
- leaves Basil
- 2 cups Datterini tomatoes

Preparation
In a pan, sauté the finely chopped onion and the pumpkin in extra virgin olive oil for about six to seven minutes.
Then add a handful of chopped parsley, salt, pepper and the datterini tomatoes cut in half.
Cover the pan with a lid and cook over low heat for about twenty minutes.
Check during cooking and stir occasionally.Meanwhile, cook the penne in a pot of salted boiling water until al dente for about eight to nine minutes and drain them.
Finally put the pasta back in the pot and combine it with the cooked pumpkin.
Serve on plates with fresh basil and enjoy the hot, flavorful pasta.

Tip for the recipe:
Be careful with the pumpkin’s cooking, however do not overcook it so it doesn’t become mushy.
You can also add some hot chili pepper at the center of the table; it pairs well with the sweet pumpkin but this is optional.
Datterini tomatoes are preferred but if not available you can use other small tomatoes.
Finally, autumn and winter are the right seasons to take advantage of this recipe.
