As part of the “I turn sweet into savory” series, today we prepare pancakes… but in a completely new version!

These savory pancakes with zucchini are a light and playful reinterpretation of the classic American breakfast, perfect for anyone craving something different yet simple to make.

The special trick? They’re made entirely in the blender, in a few minutes and with almost no mess. Also, they are without oil and without butter, so they’re ideal even for those looking for a light but still satisfying recipe.

Ingredients

  • 1 round zucchini (about 5 oz (≈140 g))
  • 1 2/3 cups all-purpose flour
  • 3/4 cup milk
  • 2 eggs
  • 3 oz grated Parmesan
  • 1/2 teaspoon instant baking powder (for savory preparations)
  • 1 pinch salt

Steps

  • Start by washing and roughly chopping the round zucchini into large pieces. Put it in the blender and blend until fairly smooth.

    Add the eggs, milk, flour, grated Parmesan, baking powder and a pinch of salt, then blend again until you obtain a smooth, homogeneous batter.

    Heat a nonstick pan and pour a ladleful of batter for each pancake.

    Cook over medium heat for about 2–3 minutes per side, until golden.

Storage and tips …

Savory zucchini pancakes can be stored in the refrigerator for 2–3 days in an airtight container.

Before serving, you can quickly reheat them in a pan or in the microwave to make them soft again.

For a more rustic texture, pulse the zucchini less in the blender or grate it by hand.

You can substitute the Parmesan with Pecorino or another strongly flavored grated cheese.

For a lighter version, use semi-skimmed milk and slightly reduce the amount of cheese.
