Baked mozzarella on a crispy base is a tasty dish, easy to make and economical.
A kind of mozzarella in carrozza, but less demanding to prepare and baked for a few minutes — just enough time to melt and become irresistible with its crispy bread base and its golden, aromatic coating… A perfect dish when the pantry and fridge are almost empty, for an impromptu aperitif or an informal dinner, alone or with company.

Ingredients
- 14 oz mozzarella
- sandwich bread (4 or 5 slices)
- breadcrumbs
- grated Grana Padano (grated)
- lemon zest (zest of one lemon, grated)
- oregano
- extra virgin olive oil
Preparation of baked mozzarella on a crispy base
Drain the mozzarella well from its preserving liquid and cut it into thick slices.
In a bowl mix 2 tablespoons of breadcrumbs, 1 tablespoon of grated Grana Padano, a little oregano and the grated zest of one lemon.Arrange the sandwich bread slices in a baking dish brushed with a little extra virgin olive oil, covering the entire bottom without leaving gaps, and brush the top surface of the bread with oil as well.
Bake in a preheated convection oven at 392°F for five minutes.Remove from the oven, sprinkle the surface of the warm bread with a little grated Grana Padano and then place the mozzarella slices on the bread.
Sprinkle the mozzarella with the breadcrumb and Grana mixture prepared earlier.
Finish with a drizzle of extra virgin olive oil and bake again, still in convection mode at 392°F for 10–12 minutes, until golden.
