- 1 onion
- 2 tbsps tomato sauce
- 1 cup vegetable broth
- 7 oz grated Parmesan cheese

Clean and peel the carrots and onion, then chop everything and add to the blender, including a celery stalk after removing the leaves, blend very finely.
In a pan, pour a tablespoon of olive oil and sauté the chopped mixture, adding chili pepper or mixed spices if you like.
Cook while stirring, then add two generous tablespoons of tomato sauce.
Rinse the lentils and add them to the mixture. Cover the lentils with the pre-prepared hot broth. As it dries, add more little by little until the desired doneness is achieved, about 20 minutes in total, do not let them dry out too much.

Let the cheese melt evenly, and with the help of a spatula, flip it after about a minute and remove the parchment paper.
To shape them as baskets, immediately transfer them, still hot, onto a glass and mold them with your hands, be careful as they are hot.
Shortly before serving, assemble the baskets by filling them with slightly warmed lentils and garnish with pieces of broken Parmesan basket.
