  • 6 eggs
  • 9 oz granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 pinch fine salt
  • 2 1/2 cups milk
  • 120 g egg yolks
  • 1/2 cup granulated sugar
  • 1/2 cup cornstarch
  • 1 packet vanillin
  • 1 cup alchermes
  • 3 1/2 oz blueberries
  • 1 1/2 oz red currants
  • 1 1/4 cups whipping cream

Steps Heart Cake Valentine’s Day

  • In a high-sided bowl, beat the eggs with the sugar, salt, and vanillin for at least 10/15 minutes on high speed with the whisks until you reach a firm and well-mounted mixture.

    Sift the flour twice and add it to the mixture a little at a time, stirring with a spatula from the bottom up.

    Once well mixed, pour into a tall springform pan, greased and floured.

    Bake in a preheated static oven at 350°F for 35/40 minutes. Always do the toothpick test; if it comes out dry, it’s ready.

    Wait for it to cool before cutting it using a long knife,

  • In a saucepan, work the egg yolks with the sugar, gradually adding the cornstarch, without stopping stirring until the mixture is well blended. Set aside.

    Heat the milk and add the vanillin. As soon as it reaches a boil, slowly add the egg mixture and continue stirring for 5 minutes, or until you get a creamy consistency.

    Pour the cream into a bowl and let it cool covered with plastic wrap to prevent a film from forming on the surface.

  • Cut the sponge cake in two and soak it with an alcoholic syrup made with alchermes (if not diluted, add water, check the bottle instructions).

    Place the first heart on a serving plate or cake tray and cover the entire surface with pastry cream, then place the other disc on top.

    Beat the cream with the whisk at maximum speed for a couple of minutes.

    Cover the entire cake, smoothing it with a spatula.

    Using a piping bag with a medium star tip, decorate with small dollops.

    Arrange the fruit creating various hearts.

  • Place the cake in the refrigerator for a few hours before serving.
