Ingredients
- 5/8 cup parboiled rice (or other)
- 2 peppers
- 1 can canned tuna
- 3/4 cup cherry tomatoes
- 1 tsp salt
- to taste extra virgin olive oil
- to taste chives
- to taste sweet paprika
- 1 pinch curry
- few fresh basil leaves
- 1 slice melted cheese

Steps
First, bring a pot of salted water to a boil and once it reaches the temperature, pour all the rice into it and cook for the time indicated on the package.
Meanwhile, take the peppers and with a knife make a straight cut at the top, creating a “lid” that we will use for presentation. Clean the inside of the peppers by removing the seeds and the so-called placenta. Proceed to cook the peppers – and the lids – in the air fryer for 20 minutes at 350°F.
To continue, once the rice is cooked and drained, pour it into a salad bowl and season it with chopped cherry tomatoes and properly drained canned tuna.
Proceed to add the salt, oil, and chives.
To complete with the seasonings, add the sweet paprika, curry, and fresh basil cut into pieces.
At this point, fill the pre-cooked peppers with the filling using a spoon. Drizzle with a little oil and a pinch of salt and cook again in the air fryer for 20 minutes at 350°F.
Finally, once cooking is complete, remove the peppers from the basket and add sliced melted cheese before “closing” the peppers with their lids and serve on a plate.
Tips
Let the peppers rest for at least 30 minutes after cooking to enjoy them at their best.
The peppers can be stored in the fridge for about 2 days and can be reheated before consumption.

Can I use ingredients other than rice for the filling?
Feel free to use any stuffing you like to fill your peppers. Use zucchini, other vegetables, cheeses, etc., as long as it suits your taste.
