There’s no doubt about it! When it comes to oriental food, for me, there’s no other food that can make me feel so greedy and satisfied. The cooking methods, the sauces, the typical ingredients, and the idea of being, for a few moments, far from our culture.
In this recipe, we prepare together some rice noodles (specifically fettuccine or spaghetti as they are sometimes called in Chinese restaurants) first blanched and then stir-fried with shrimp and vegetables then flavored with some sauces.
You only need a little patience and about half an hour to make a wonderful oriental dish all at home!

- 1 zucchini

- 7 oz rice noodles
- 3.5 oz frozen shrimp
- 1 tablespoon vegetable oil
- 1 tablespoon soy sauce
- 1 tablespoon teriyaki sauce

Steps
To prepare Rice Noodles with Shrimp and Vegetables
First, take a large zucchini and once washed, remove the ends. Then cut the zucchini into slices making an oblique cut.
Continue to make “matchsticks” from each slice still using an oblique cut, if possible.
Similarly, cut the carrots, first into oblique slices and then make “matchsticks” as you just did with the zucchini.
At this point, heat a generous tablespoon of vegetable oil in a pan or preferably a wok. After a few minutes, throw in the chopped vegetables and stir-fry over medium-high heat for a few minutes.
In the meantime, bring a pot of water to a boil and cook the rice noodles for 5 minutes. After the time has elapsed, drain the fettuccine and rinse them thoroughly with running water.
Continue by adding the still-frozen shrimp to the pan with the vegetables and stir-fry over high heat, adding a tablespoon of soy sauce.
To complete, pour the rice noodles into the pan, add a tablespoon of teriyaki sauce and mix everything well, still over high heat.
Finally, turn off the heat and place the portions on a plate, garnish with a sprinkle of sesame seeds and more teriyaki or soy sauce.
Tips
For a more or less strong taste, increase or decrease the amounts of soy and teriyaki sauces.
